I killed an entire double batch of homebrew (about 90 beers) due to infection. Yes, homebrew. Yeah, it's my "hipster" hobby, according to some of you. :P
They've only been in the bottle about 2 weeks and they started exploding, so I opened the rest to salvage the bottles. Every single one of them was a fountain of foam (sign of infection). The lost batches were Doppelbock & Oktoberfest.

So, now I'm drinking Jameson 12 yr. to mourn and plan the next batch.
-
That really sucks!
What do you think happened? Bad sterilization?
-
Yeah, it's most likely a sanitation issue, but I don't know when or how. I'm going to review my methods.
-
sterilization can be a bitch. I used steam to sterilize jars before. Wasn't making beer though...
-
wow! that fucking sucks!
-
Drink it anyways. It might not taste good but you'll survive. It's the only honorable thing to do. You made the mistake somewhere...now man up.
-
remind me not to drink your beer
Don't worry, I don't make hot pocket flavored beer :-*
I'm not drinking them. I tried them, not good. It's the first time I've made an undrinkable beer. :-[
-
Truly a beer foul.........
Reusing the bottle, I'll bet the issue was with the caps.
-
I hope new caps were used.
In the past i've had a bottle or two go bad very randomly. I'd attribute that to a bottle or cap issue. However, with the entire batch bad i'm thinking it was something before it hit the bottle.
Did you transfer to a new container? How did you transfer? Did you boil the priming sugar in water for a good while before adding? What are you using to sanitize? How old are your lines? That's the stuff i would check.
-

Uh huh.
-
did you let them dry out in the over night... cause that can actually be bad for your beer...
my first batch i had half the bottles i cleaned weeks in advance... and let them sit... the other half i cleaned the night before... and then let the air dry...
the ones i cleaned weeks in advance had time to dry out any new pathogens or fungus or bacteria in general that grew on the bottles after letting air dry...
the bottles i let sit over night... because there was water in them shit grew in them... but wasn't noticeable... and ended up ruining all those bottles when i bottled them
so i had about half a batch... which wasnt bad... it just sucks... and is enough of a reason to go to a kegging system... its much easier to clean and cuts down on the bottling from an hour to 10 minutes hahahahahah
-
if you are using a good sanitizer, nothing will grow in them unless left open while sitting.
Sodium Hypochlorite solution should be perfect. 100-200 ppm.
-
I think im over it. The last batch of Apple wine i made was Vicious. that shit was close to 20% but was a HARD CORE headache producer you wanted to die the next day.
-

Which reminds me, I need to go get c02 today.

Regarding the air-dried bottles, look for the swan neck duct in the link below & do the math...
http://en.wikipedia.org/wiki/Louis_Pasteur (http://en.wikipedia.org/wiki/Louis_Pasteur)
Almost as bad as my coworker's arm after his friend's green indian ink went afoul...after coloring 1/3 of his entire arm with it. :-X

yeah i came to the conclusion... that bottle trees are just as bad as just letting the bottle sit up right to dry...
after sanatizing place on the bottle tree only long enough to bottle the beer... i might even get rid of my bottle tree since the kegging system should be here tomorrow... or monday... FUCKING APO BOXES hahahahahaha

How long does the beer last in a keg? I know a half barrel of Keystone from the liquor store only lasts 5 days after tapping. Do these kegs have the same time limits?
-
I sterilize with this:

42.5qt, all-american PC, made in Wisconsin ;)
Maybe I should start brewing.

If you guys saw how I sanitize, you would probably shit your pants. The only things I sanitize are the things that sees my wort after the boil. Everything else gets washed with a brewers wash/cleaner. My brewpot (15g keg), my mash tun, my spoon/paddle all get cleaned very good after a brew, turned upside down and waits for the next brewday. Typically, I just wipe it down prior to a brew with a damp cloth. My wort chiller goes into the dish washer with brewers cleaner. -and gets rinsed and tossed into the boil about 10min before flame out. http://www.rebelbrewer.com/shoppingcart/products/PBW-%28Powdered-Brewery-Wash%29-%252d-1lb..html (http://www.rebelbrewer.com/shoppingcart/products/PBW-%28Powdered-Brewery-Wash%29-%252d-1lb..html)
The only time I ever had a problem with being sanitized is when I was a worry freak about being sanitized.
When I sanitize, I fill up my pale/carboy with warm water and a splash of plain bleach. I toss my siphon, and transfer tube into it and about halfway through the boil, I start the siphon to drain/get the inside of the siphon sanitized and rinse with fresh water. That's it.
BTW, my rye stout was judged by a (certified BJCP) judge and he told me it could compete on the national level. It was done on my very ghetto system. -which now is a little better...

I hate you, your pictures are too nice!

I also want to know...
-
i am not sure... frank will have to answer to be exact...
but the kegs from the store are initial tapped with CO2... but then you use a hand pump... which just pumps external air into it... so it no longer has fresh CO2 going into the keg...
which means it goes bad almost instantly... its like opening a bottle and letting it sit in the fridge for a day...
now with home brew and commercial set ups... you are constantly pushing in new CO2 to push out the beer... which means it stays fresher longer...
as far as how long... probably months...
maybe longer...
its almost like keeping the bottle constantly closed... and majicly drinking the beer out of the closed bottle... hahahahahahaha
-
Good to know. So I don't need to drink 20L of beer in few days :P

you dont ... need to...
but you should... its good for your soul... :noel:
-

only 4 days worth of beer.....if you are alone.
-
kegging...I am still drinking a beer I kegged in November. My brother in law is still drinking a beer he kegged...last sept.
Licenseless pretty much hit the nail on the head.

I would never trust someone who was certified by blow jobs and child porn...

Thats about what I do. Sanitize for after thrr boil, everything else just gets cleaned with dish soap at the end of brewday and its good to go for next time. We've had one batch out of about 30 that went sour after about 3 months but we added non sanitized vanilla beans to secondary. I've only been worrying more about bottles lately, I'm thinking about rinsing and drying in the dishwasher to kill lbugs with heat.
Did you add the vignetting to those brewing pics in PS lol.
-
knowing frank... he used lightroom...
but if i had a dish washer i would use one... living on the economy in japan... makes it hard to get one unless i pay for government standard houses off base... and they usually want twice as much for rent...
so everything i do is all by hand and bathtub... so i have to use santizer...

dish soap is probably the WORST thing you can use to clean brewing equipment. -from experience. if its working for you, I guess continue to use it. But they make a brewing cleaner for a reason. If you cant afford the brewing cleaners, at least go with oxy clean.
and no, the camera did the vignetting. You see my ad for the $2k camera...lol.
-
I'm debating on using Star-san or Iodophor... seems to be the top 2 picks. Leaning towards Iodophor because it's cheaper.
Nice setup, Frank. I wish I had the space, lol.
-

I know you had a good camera thats why I asked, did you use the wrong lens hood or an old lens, New DSLRs with kit lenses don't get vignetting. I think it looks cool thats why I am asking. I've used my dads D200 for a while, I'm thinking about getting a D3000 or D5000.
For the longest time the "sanitizer" I was using was actually just a cleaner lol, I noticed after the 3rd or 4th batch.
