Title: Grilling
Post by: xpert787 on March 18, 2009, 07:27:37 PM
My wife bought us a cheap grill from home depot today. Made some hamburgers and they turned out really good. I want to do some chicken this weekend but don't have any good idea for seasoning to add. I want to do something other then lemon or BBQ. Can anyone give me some ideas of what they do/what taste good.

Chicken...I got my tips from a  O0 I worked with.

Cheap seasonings and cheap sauce. Season-all the piss out of it and add some KC masterpiece sauce. I do it everytime I do chicken on my grill.

BEST grilled chicken recipe EVER!!!!  I make this shit all the time in the summer...but it does take some prep time. :)

1 tablespoon paprika
4 teaspoons sugar, divided
1 1/2 teaspoons salt, divided
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon lemon-pepper seasoning
1 teaspoon cayenne pepper
2 teaspoons pepper, divided
4 boneless skinless chicken breast halves
1 1/3 cups mayonnaise
2 tablespoons water
2 tablespoons cider vinegar

In small bowl, combine paprika, 1 teaspoon sugar, 1 teaspoon salt, garlic powder, thyme, lemon-pepper, cayenne pepper, and 1 teaspoon pepper; sprinkle over both sides of chicken.  Set aside. In another bowl, combine mayonnaise, water, vinegar, and remaining sugar, salt and pepper; cover and chill 1 cup for serving.  Save remaining sauce for basting.

Grill chicken, covered, over indirect medium heat for 4-6 minutes on each side or until juices run clear, basting frequently with remaining sauce.

Serve with reserved sauce.

BEST STUFF EVER!  Make it, you won't be disappointed.

Sincerely,
The ex-chef. :)

Grilled some burgers today, turned out excellent. Patty'd them up and stuck them in this jack daniels marinade bag they sell at walmart, let em chill in there for about a hour and tossed em on the grill. MMMM

some of the best stuff i have ever grilled always come from just trying new things and just throwing stuff together. i made burgers one night and wanted something to add to the meat to give it more flavor. ended up adding a little italian dressing and chopped up onions to the meat, made the pattys and grilled them up and put them on onions rolls with pepper jack cheese and a slice of avacado. turned out pretty badass.
for ribs i like to take a pot and put a bottle of original bullseye in it, add honey, brown sugar, tabasco, a cut up jalepeno and about 3/4th of a beer and whatever looks liek it might go good, and bring it to a boil while mixing it all together to get things to blend right. then cook them on the grill with seasoning salt with no sauce for a bit then start turning them over every few minutes and smothering them with the sauce every time i flip until they get the perfect amount of carmelized sauce on them. sometimes i take some of the sauce and add more beer to it and marinade them for a few hours in it. i didnt have any beer one time and figure i would substitute the beer for apple juice and it turned out pretty bomb, gave the meat a sweet flavor.
