that looks very simple and pretty good. i always use my slow cooker, its great for lazy single guys that want the house to smell like they cooked something lol. im gonna try this if it gets the grand wizards approval

I bought shrimp and andouille sausage the other day intending to do some Jambalaya.  My recipe is pretty much as stated above except I use a red and a yellow bell pepper instead of just one, and I used chicken stock because it's a lot richer and makes me go MMMMMMM GOOD on the inside.

Most everything chopped up and tossed into the pot:





I forgot to grab chicken, and the yellow bell pepper I had on hand seemed weird by itself so I picked up a red one when I retrieved the kidunit from school.  I also used a couple cans of the Rotel Original diced tomatoes and green chilies instead of plain diced tomatoes - I swear by this stuff, it's not super spicy but it has that good savor that spicy food ought to have.  I use it with the Zatarain's spanish rice mix for a super easy tasty side dish.  But, I digress.





Everything mixed into the pot (And because I'm an intellectual being,  shrimp, as per recipe):





Now it sits there for a few hours:

Man im making a big ass pot roast right now in my crock pot thing. And i got some bbq rib tips for tonights dinner, done them up on the grill already, just waiting on the mashed potatoes.

sad but true, but im sure i can get jose's ass to eat that if hes not out of town visiting his chic lol. ide just have to make tortilas with it hahaha. ive never heard of etouffee though. not many creole places around here

ok i just googled etouffee and it looks pretty easy. might try that one of these days when i feel the need to flex my cooking muscle (which has kinda been missing the last few years)

Turned out slightly thin, and a lot spocoer than i thought it would be.  Needs salt, and I added tomato sauce last minute.   Next time I'd do two cups stock and cook it longer, cook the excess liquid off.

Lets do this on Monday, I'm off then. I love jambalaya. I normally don't eat seafood, but shrimp in jambalaya is an exception.
