I make pancakes on a dry stainless pan. You have to get the batter to the right consistency, and cook them a little bellow medium high. If they burn before the bubbles pop up , it's too hot. When bubbles pop up over the entire surface flip it. it shouldn't take more than 15 seconds per cake.
