rhmt recipe: schezuan beef

reposting the recipe that i had on ohmt. remade with non crappy cell phone pics.

this is as close to the taste as i could get. i never really liked the texture so i modified it..
but i replicated it and its just one step i skip..

left over bbq steak ownage.


cut out the fat


cut them into thin strips.. (if you want the original schezuan beef texture.. then deep fry the cut up steak bits for a couple minutes to make the outside crispy! i skip this step because i hate it..)


onions


slice em up thin


then grab handfuls at a time and act like your bawling up a paper to separate the onions..


bbq sauce (sacrilegious yo!)


half stick butter and half cup sugar. you can also use honey.. but i didn't have any...


quarter stick butter into wok pan melt it i usually use sesame oil but again didnt have it.. oh well


toss in onions.. your don't want to brown them so keep the heat low


they will condense


toss in meat and the rest of the butter


turn heat to highest


cooking


toss in sugar


cooking


bbq sauce


simmer


usually save up empty bbq sauce bottles to add a lil water and swish it around and dump in


med heat till its done simmering to the consistency that you want it..


then turn down the heat


toss in one more onion (this is how i get the crispy texture back i just didn't like it when it was in the meat.. or you can use baby corn)
the idea is after you toss in the onion you only leave it on the heat long enough for the onion to cook and then remove it right away so it stays crispy..

trying to show how awesome the sauce is.. it sounds like it'd be nasty with the sugar but it really isn't..



done! ate with uncle bens rice.. already showed how to make rice in other threads

made some quail pizza last weekend with my friend. was pretty tasty. killed quail, skinned and took breast meat, cooked slightly, threw on top of pizza and cooked in oven. ding pizza done
