Since the fooseball hysteria flooded the market with cheap avocados I've been making some sweet guacamole.
I'm too lazy to post pictures, or even copy/paste a link, but Alton Brown's recipe gets my vote.

I love making guac. When I drove to Miami last month I saw some HUGE avocados at an orange stand and had to buy some. The ones we get here at the grocery store in WI were about half the size.

I made approx 300 guacamoles because I was working in a bar. So, this is the best guacamole ever. Perfection.
Made in 3 minutes cause I have a degree in veg cutting ;) Never put it in a blender or any kind of mixer, that sucks.
avocados
green pepper
Red oignon (no white trash oignon)
Real lime juice (half of one is enough)
Olive oil
Salt & pepper
Italian tomato, exterior only, don't put more liquid into the guacamole
Fresh corriander
I prefer to let it seat in the fridge to let it cool down and taste is better.

Guacamole is supposed to be more like a dip than a salsa. The avocados need to be smashed up into a paste. Then add your lime, salt, pepper, garlic, and MINCED onion and tomato (not chopped or it will be too chunky).

No Frenchie, our recipe for guacamole is fucking avocados. You can add lime, salt, pepper, jalapenos or whatever to taste, but the primary ingredient is avocados. Mayo and sour cream are for deep fried potatoes prepared in countries where people run away from fights and hide behind other countries.

Hot is good but shit like that is usually just a shit ton of heat and no flavor. Its all about making shit non edible so you can either clean pennies with it or play jokes on your friends.

I order wings from Domino's with the Tangy Mango Habanero sauce on them.
