CB550 or CB750 for Cafe Racer Project

I found a pretty solid deal for a CB550 that some guy started fucking with but didn't get very far.  Bought a bunch of parts, spare bike and engine, and the bike has a clean title.  It is in non running condition.  Guy took off the carbs and ripped off the wiring to replace with new stuff he bought.  He is saying he got overwhelmed by the project.  Anyway, I don't care.  I plan on stripping the bike bare and building it from the frame up.  As long as the "expensive" mechanical parts are in a shape to be rebuilt and the frame is straight and not failing, it is usable to me.

Now, the thought is, do I go with the CB550 or hold out for the 750?  750 is a bit more rare/expensive but I get obviously more power.  Right now I'm still riding the SV650.  550 will be slower even after minor engine work.  750 would be about the same after minor engine work(maybe a little slower but still not a big deal).  I'm leaning towards just getting the 550 and starting the project, but a 750 seems like a better long term decision.

Keeping both nogglet.  CB is a project/fun thing.  SV650 is my daily.  I need a project, and bikes are smaller and cheaper than cars.

CB750's are about as rare as honda civics are. Just don't go with the shitty later dohc cb750. Not to mention sohc 750's have parts galore compared to the stepchild 550's. Just please don't put clubman bars, checkered boards, or anything gay like that on it and ruin it. I say hold out for a sohc CB750. Personally I would look for a CB360/350 cause one; their cheap, can be made to look extremely badass, I'm just a twin guy, and parts are everywhere. Hell even better would be to find a Suzuki GT750 water buffalo. A two stroke water cooled 750. Need I say more.

So, 1 CB550(title), 1 CB550 engine/frame(no title), 1 cb750(title), and all the parts - $1900.  Looks like I'm picking up 2.5 more motorcycles tomorrow.
