this is a fairly quick recipe aside from letting the egg plant slices sit in salt for 4 hours..
but i usually do that and fry them then freeze them way before... egg plant has a meaty taste to it...
for this recipe you will need
tomato sauce (i used fresh tomatoes simmered down for ~3 hours.. can use watered down tomato paste i will add a how to when i make this batch tomorrow...)
egg plants..
salt/pepper/paprika/oregano/garlic powder
mozzarella cheese
italian bread (can use french bread but Italian is better)
grocery store special box of tomatoes for 2 bucks
2 boxes of egg plants for 1 dollar a box.
kinda tired/lazy/in a hurry so didnt get detailed pics..
peel some of the egg plant but leave the rest.. half it.. and slice it up..
leave it in tray... and sprinkle lots of salt.. and leave it for a couple hours..
that helps "dry" the egg plant.. you will notice water accumulate at the bottom of the pan.. just dump it out...
toss em in the deep fryer.. i usually grille them but no time today..
already had tomato sauce made from before...
will add to this write up when i make this batch... basically just wash/dice tomatoes and simmer them for 3 - 4 hours...
you get something that looks like this.. can use watered down tomato paste.. but you will be taking a hit in the taste dept..

bake between 300 and 450... i tossed some bell peppers ontop..
