baked pork chops
« on: October 26, 2009, 05:35:08 PM »

Anyone have any good pork chop recipes? I have some pork chops sitting here that I want to make for dinner, just unsure of how to cook them. I normally grill them and marinate them with corona and lime but want to try something different. They're boneless and about 3/8 to 1/2 inch thick

It's raining outside, so I'll have to make them on the skillet. Anyone got any ideas? This is the best one I've found so far. The only thing I need is the vinegar.

I will accompany the chops with some baked 'taters and some rice a roni unless you nigs have any better ideas.

lets hear your recipes. I'll be sure to post some pics when I get to cooking in a few hours.

****Recipe Edit****

(serves about 7-8, 1/2" pork chops)
4 cups of hot/boiling water
5 cups cold/chilled water
3/4 cup sugar
1/4 cup salt
1/4 cup black peppercorns
1 20oz can of Dole pineapple chunks

1. mix salt, sugar and peppercorns together, then pour hot water into a bowl/container. Stir until everything gets dissolved.
2. add cold/chilled water.
3. put 2-3 chops(up to 3/4" thick) in zip lock baggies and pour your brine in until full. Do as many baggies as you need done, or until you run out of brine.
You want the chops to marinate for a good while, but not too long. I marinated mine for 1 hour since they aren't that thick. The thicker the chops are, the more time they need.
4. put now marinated chops into a cake baking container and pour about a 1/4" of brine into the container. Put pineapple chunks on top of chops. Cover container with foil.
5. Since you probably forgot to preheat the oven as I did, let the chops chill in the fridge until the oven is pre heated to 350F. Let cook for about 1 hour or so. If you have a meat thermometer, pork needs to be heated to 160*F at its center. I don't have one, so they're done when I say they're done.
I accompanied the chops with some baked, Idaho grown, 'taters as well as some Chicken Brocoli Rice-a-Roni. If I was a white man, I'd say some champagne might go good with the meal, but since I'm a beaner I chose to wash everything down with some Coronas.  Some Sangria would go down well with this though.

Pan sear on both sides to seal the meat.

Put in oven and cover with your favorite BBQ sauce. Cook on broil until finished.

Who told you that? Yeah, I just got out of jail a few days ago. Chilling at my gf's and will be back in town on Halloween.

I'll update my first post with the recipe I made tonight. It was pretty good. Could probably use a little more pineapple juice.
