Like an interface to add product, order management, shipping rate change interface, report generation, etc.

As far as I'm concerned, that is the web developers call.  There are about 15 open source carts to use.  I couldn't begin to guess which one is best except by installing each and everyone of them.  Even then, without a live site doing what I need it to do, I couldn't venture to really guess which one is best.  I briefly used both osCommerce and ZenCart in the past and found both relatively easy to use without going into huge detail.

In all honesty, if someone can't give me legit feedback/support on the cart itself, I can't work with them.  Think of me as a dumb 60 year old woman that just wants a website and is computer literate enough to know basic HTML and how to use a computer.  I don't want it to be assumed I'll be able to troubleshoot and figure out everything myself.  I also don't want there to be an assumption that I know anything except about my industry.  Just because I think something will work, doesn't mean it will.  I seriously want professional guidance/opinions on going through this process as I'm not an expert.
