70% ground chicken meat with cure and salt added.

One bin/combo has.......

2000 lbs ground chicken
140 lbs salt

4 bins into a 10,000 lb mixer........add 5 shovels of beef fat, 3 shovels of pork back fat, 500 lbs of ice, rest of dry spices and salt + Sorbitol binder.

There you have a 10,000 pound batch for cheap shitty John Morrell hot dogs, P2564 USDA number. Same dogs go into 20+ different packages, cost was under .35 a lb, market price was .99 for a 12 oz. package.

Below 50% poultry the package has EST 296 on the label, same plant at 801 East Kemper in Cincinnati, Ohio.

I did 14+ years there, April 1985 till Sept 1999.

Speaking of hot dogs I can not stand all beef or even most beef/pork mixes... some call it strange but I actually prefer the turkey, chicken, pork, beef dogs.  Beef dogs taste like bad steak almost and have a funky rubbery texture, even the "good" ones.  I'll take my cheapo $1 a pack Gwaltney mix dogs any day over a Hebrew National.  :-X

And fried Clausen cold style pickles are ballin.

IMO hot dog is a hot dog except for the wierd turkey or chicken or beef dogs.  If you can tell what animal it came from i dont want it in my hotdog.  Boarrs head has killer dogs, so are hebrew national.

But like 30 hotdogs for 99 from dollar tree is where its at too  O0

for the love of god never try teh angus hotdogs.  it tasted more like anus hotdogs.

The egg and cheese idea on top (was originally going to be without it) seemed strange to me but strangely delectable in thought.  It was proven factual through eating.

Oh snap, forgot to add: few hours after that heart attack sandwich, a buddy and I wrapped already cooked hotdogs in slices of cheese, battered them, and deep fried them.  They too were awesome  :yes:  No pics though :(

All this is done in the hospital kitchen  :evil:

I didnt do it since I felt lazy and just went to in and out. Seasonings just add bay leaves,garlic powder,salt,pepper. Easiest shit in the world to make.
